sweet & spicy salsa

Very satisfying atop (leftover) steak fajitas, quesadillas or eaten with a spoon.

  • 3 heirloom tomatoes
  • 3 leeks
  • 3 sweet peppers
  • 1 peach
  • juice of 1 lime
  • firm squeeze Sriracha (chili based hot sauce)
  • handful of cherries (added after tasting made my lips burn)
  • chop or dice ingredients (depending on how chunky you prefer), mix well
  • if you like it soupy, throw half in the blender & stir in the chunky half before serving
