use what you have



On Sunday afternoon, I took a risk with a classic recipe. I used bacon drippings (collected & refrigerated in a glass jar) instead of butter in chocolate chip cookies. They are delicious, so rich & savory that I can really only eat one while drinking a glass of milk. There is no room for a second.

ingredients
cream together:
  • 1 c bacon drippings (chilled, then let sit out maybe 10 min so it's the right texture)
  • 2 c sugar
  • 3 t vanilla extract
  • 1/3 c milk
dry:
  • 2 c all purpose flour
  • 1 t baking powder
  • 1/2 t baking soda
  • 2 c old fashioned oats (1 c whole, 1 c ground)
  • 12 oz semi-sweet chocolate chips or cacao nibs

preparation
  • preheat oven to 350 degrees.
  • cream butter + sugar. add milk + vanilla. beat for a couple more minutes.
  • add the rest of the ingredients, continuing to mix on low speed.
  • on a baking sheet covered with parchment paper, scoop + drop 12 balls of dough. bake for 10 to 11 minutes, and the cookies will be chewy in the middle and crisp on the edges.
  • makes 32-40 cookies (approximately 3" in diameter)
